Cinnamon SpicedSweet Potato Pancakes

Ingredients (Serves 4):

450g sweet potatoes, peeled & cut into cubes

6 eggs

1 tsp. ground cinnamon

1 tbsp. coconut oil

30g walnuts or pecans, chopped

2 tbsp. maple syrup

Directions:

Cook sweet potatoes in boiling water for 15 minutes. Drain and cool.

Blend potatoes, eggs, and cinnamon in a large bowl until smooth.

Heat ¼ tablespoon coconut oil in a non-stick pan.

Add 3 portions of batter (2 heaped tablespoons each).

Fry for 3 minutes until golden brown, turning halfway. Repeat with the remaining batter.

Serve 3 pancakes per plate. Top with chopped nuts and maple syrup.
