High Protein Halloumi & Cashew Curry

Packed with protein, healthy fats and fibre, it's a delicious way to nourish your body while enjoying real food.

Serves 4

Ingredients:
• 450g halloumi, sliced into cubes
• 100g raw cashews
• 1 onion, finely diced
• 3 cloves garlic, crushed
• 1 thumb-sized piece fresh ginger, grated
• 1 red pepper, chopped
• 400ml light coconut milk
• 2 tbsp tomato purée
• 2 tsp curry powder
• 1 tsp turmeric
• 1 tsp paprika
• 150g spinach
• Juice of ½ lime
• Fresh coriander to serve
• Salt and pepper to taste

Method:

  1. Soak the cashews in boiling water for 15 minutes.

  2. Blend the cashews with 100ml water until smooth to create a creamy sauce.

  3. Spray a large pan with oil and fry the halloumi until golden. Remove and set aside.

  4. In the same pan, cook the onion, garlic and ginger for 3-4 minutes.

  5. Add the spices and tomato purée and cook for another minute.

  6. Stir in the coconut milk and blended cashew sauce.

  7. Add the red pepper and simmer for 10 minutes.

  8. Return the halloumi to the pan and stir through the spinach until wilted.

  9. Finish with lime juice and fresh coriander.

Protein: approximately 28-32g per serving

Serve with cauliflower rice for a lower-carb option or basmati rice if you're active and need extra fuel.
