Chocolate Peanut Butter Chia Seed Pudding

Ingredients:

For Chia Seed Pudding:

1/2 Cup Unsweetened Almond Milk

1 Tbsp Peanut Butter

1 Tbsp Cacao Powder

1/2 Tbsp Honey or Maple Syrup

1/2 Tsp Vanilla Extract

2 Tbsp Chia Seeds

Optional: 20g Chocolate Protein Powder (I use grass-fed whey protein).

For Chocolate:

1 Tsp Extra Virgin Coconut Oil Melted

1 Tsp Cacao Powder

1/2 Tsp Maple Syrup

Toppings:

1/2 Banana

Chopped Nuts Of Choice

Instructions:

  • In a blender, mix milk, peanut butter, cacao, honey and vanilla extract until a smooth consistency.

  • Stir in the chia seeds.

  • Pour mixture into a mason jar, cover and pop in the fridge for 30 minutes or overnight.

  • For the chocolate, mix the melted coconut oil, cacao powder and maple syrup in a small bowl and then add to the chia pudding mix. 

  • Served chilled with banana and nut toppings of choice.
